Poultry stock or water (as required, at least 1 liter)
3 to 4 tablespoons sunflower oil

20 smaller mushrooms

About 400 g “Blaťácké zlato” cheese

Preparation:
Heat the oil in a wok on a high heat. Cut the meat into large pieces, season well with salt and pepper and place the wok. It should coated with oil on all sides and lightly colored. Then add the peeled, halved onions to the wok, and fry everything for about another 3 minutes, stirring occasionally. Lower the heat, add the garlic cloves and continue cooking until the onions and garlic are soft and golden. Add pepper and fry everything for another minute or so. The pepper will provide an aroma.
Increase the temperature, add the lager and wait for the alcohol to evaporate. Then pour some broth into the wok (to cover the meat), put on the lid and simmer the meat until tender, about 60 minutes. Add broth as needed.
Once the meat is ready, reduce the stewing juices. Remember that the meat will be used as a filling in the tortilla, so the juice must be full of flavor and really thick. Finally, shred the meat in the juice, using two forks.
Remove the legs from the mushrooms, coat them with oil and start grilling. Once they have softened and taken on color, which will take 5-8 minutes depending on the size, then add salt, pepper and finally season with a squeeze of lemon juice. Alternatively, you can fry the mushrooms in 2 tablespoons of butter in a pan.
Spread the tortillas on the grill and heat them briefly, then put a little meat and juice, 3-4 grilled mushrooms, chopped parsley and a reasonable amount of grated cheese in each one. Roll up the tortillas and finish grilling as needed. You can complement the tortillas with a simple mixed salad at the table.
